When I took my first bite I thought, wow, did I make this? I’ve never made a good beef stew. Well, leave it to a recipe with little to no instruction to create the best beef stew I’ve eaten. Here it goes:
Ingredients:
2 pounds stew meat
1 onion, diced
2 carrots, sliced
2 cups green beans, broke into bite-sized pieces
1 cup sweet corn
2 tablespoons beef stock base (I like Organic Better than Bullion)
1 teaspoon salt
2 cloves garlic, minced
½ cup apple juice
1 tablespoon Worcestershire sauce
DIRECTIONS:
Put all of the above ingredients in the pot. Add 1 1/2 cups of water to slow cooker before cooking – I changed this and didn’t add any water, just beef stock (I’m pretty sure that’s what made this great). Cook 4 to 6 hours on medium/low – I did this on the stove in my Le Creuset, but you could opt for the crock pot at 6-8 hours on low.
