I was trying to eliminate wheat from my morning routine, and in order to have a complex carb involved still I turned to sweet potatoes. This hash recipe has been helpful in spicing up an otherwise boring plain sweet potato breakfast.
- 2 Sweet potatoes (peeled and chopped into 1 inch cubes)
- 2 cloves garlic
- 1/2 white onion
- 1/4 bell pepper
- 1 tbsp olive oil
- Salt and Pepper
- In a medium sauce pan heat the olive oil and add the garlic, onion, and bell pepper. Cook until fragrant or lightly browned. Transfer to a bowl.
- In a separate pot of boiling water, add the sweet potatoes and cook until softened. Drain water.
- Add the sweet potatoes to the medium sauce pan and spread out evenly. Sprinkle with paprika, salt and pepper. Cook on low until lightly browned. Add onion mix and stir together.
Note: This makes about 4 servings, so I store and reheat throughout the week.
