Since I had leftover pear from the ‘pear slaw’ recipe, I needed to do something with it. Behold, the brie and pear quesadilla!
- 1/8 tsp Rosemary
- 1 pear chopped
- 2 tbsp red onion chopped
- 4 oz Brie (I used half of the 8 oz container of President Brie)
- 2 tortillas
In a medium skillet, heat the tortilla and arrange the brie slices evenly on top of it. Once the brie has melted half way, add the pear and onion. Sprinkle rosemary and drizzle honey on top (as much as desired). Add second tortilla on top and flip to cook the other side for about 3-4 minutes. Transfer to plate and cut with a pizza slicer. Voila, it’s ready to eat!
