In situations where olive oil is one of the main components of a recipe, I often don’t want to actually taste the olive oil in the dish (i.e. zucchini pasta with Parmesan cheese). After testing several options from Whole Foods, and my go to ‘cheap’ olive oil, this one beat out all of those as having the perfect light flavor. I try to use it sparingly (and you will too once you see the price), but it is a must have in my kitchen now.
