Pear & pecan slaw – sounds crazy right? Well it does, but it tastes heavenly. Heres how to make it:
1/3 cup chopped pecans
4 cups shredded purple cabbage
1/3 cup dried cranberries
1 pear chopped
4 scallions chopped
3 tbsp apple cider vinegar
1. On medium heat, toast the pecans in a skillet for about 7-10 minutes. Do not let them burn, stir occasionally. Transfer to a bowl.
2. Add cabbage to the skillet and cook, stirring frequently. You only want the cabbage wilted slightly (1-2 min). Transfer to a bowl.
3. Add pecans, dried cranberries, scallions, pear, vinegar to the bowl of cabbage. Season with salt & pepper and toss to coat.
