My favorite chicken salads always have fruit and nuts in them, and this one is a recent favorite.
- 1 lb. shredded rotisserie chicken
- 2/3 cup mayonnaise
- 1/4 cup finely diced red onion
- 1/2 cup quartered red grapes
- 1/2 – 1/4 cup chopped walnuts
- salt and pepper to taste
- In a large bowl add the chicken, grapes, nuts, red onion, mayo, salt & pepper. Stir well to combine.
- Serve on croissants.
Doesn’t get any easier than that!
