Review: Blue Apron – Beef & Potato Latkes

Well, our first Blue Apron meal was a success:  Sauteed Beef & Potato Latkes!  While the prep time was much longer than expected, the end result was delicious.  I also wish they would have listed the tools needed under the ingredients, since apparently I do not have a box grater.

Sauteed Beef:  Pouch of tomato paste mixed with caramelized onions and thyme are what comprised the golden sauce you see.  My  husband and I will add a like curry or Tony Cachere to this next time to give it a spicy kick. It was a little bland for our Cajun taste buds.

Potato Latkes:  2 potatoes grated, 1/2 onion grated mixed with about 1 1/2 tbsp of matzo meal and an egg (already beaten) and then fried in a pan.  Salt and pepper to taste and they are kind of like homemade hash browns. YUM!

Beets & Carrots:  Coated with Olive oil, salt, pepper, and thyme cooked in 475 degree oven for 18 minutes.  I had never worked with a fresh whole beet, so I was excited about it until my hands were died pink, ha!  Peel the skin off just like a potato.
