Burrito Bowls!

What’s more fun than building your own bowl? A new week night favorite, this is a nice interactive spin on taco Tuesday.

Ingredients:

  • 1 lb ground meat
  • 1 can black beans
  • 1 packet taco seasoning
  • 1 onion – sliced
  • 1 bell pepper – sliced

Directions:

  • Slice the bell pepper and onion horizontally. Put 2 tbsp of olive oil in a medium pan, add the onion and bell pepper. Salt and pepper. Cook down the onion and bell pepper until onions are translucent on medium heat.
  • Transfer to a bowl.
  • Use the same pan for the beef. Place ground beef in pan on medium-high heat. Salt and pepper. Cook until lightly browned and add the taco seasoning packet.
  • Follow seasoning packet instructions.
  • Drain and add black beans to ground beef mixture and cook for 5 more minutes.
  • Combine all ingredients in a bowl and serve over rice.
  • Optional – have Monterey jack cheese and sour cream as toppings.
