My mom used to make this often growing up and I find it is the perfect spin on a traditional stir fry.
Ingredients:
- 1 Lb Stew Beef
- 2 Baking Potatoes – peeled and sliced 1/2 inch thick
- 1 green bell pepper – diced
- 1 yellow onion – diced
- 2 tbsp minced garlic
- 1/2 cup soy sauce
- 1 tbsp olive oil
Directions:
- Cut the beef into thin slices and brown in wok with 1 tbsp olive oil and the 2 tbsp minced garlic. Add in the soy sauce and simmer for 1 hour.
- Add in all other ingredients and cook for another 30 minutes.
