I absolutely love the sweet and salty combination of this dish. You can easily make this a sheet pan meal by baking diced potatoes and veggies with it.
INGREDIENTS:
- 1 lb ground pork
- 1 1/4 cup panko breadcrumbs
- 3 tbsps soy sauce
- 4 tbsps hoisin sauce
- 1 tbsp Sambal Oelek
- 1/3 cup East Asian-Style Sauteed Aromatics*
DIRECTIONS:
- Place an oven rack in the center of the oven and preheat to 450 degrees.
- In a bowl, combine the soy glaze, hoisin sauce, and as much of the sambal as you prefer. Stir to combine.
- In a separate bowl, combine the pork, breadcrumbs, half the sauteed aromatics (you will have extra) and half the glaze. Season with salt and pepper and mix to combine.
- Transfer to the center of the sheet pan and shape into a tight loaf, about 10 inches by 3 inches.
- Evenly spread remaining glaze onto the meatloaf.
- Bake for 22- 24 minutes.
*For the aromatics (cook in a pan for 5-7 minutes):
- 3 Tbsps finely chopped peeled ginger, about one 3” piece
- 3 Tbsps finely chopped scallions
- 1 Tbsp finely chopped garlic
- 3 Tbsps neutral oil
