Chickpeas, cumin and chicken, oh my! This recipe is easy to prep and a delicious weeknight dinner when you don’t have the energy for something more complicated.
Ingredients:
- 3 pounds bone in chicken
- Kosher Salt
- Black Pepper
- 4 tbsps lemon juice
- 2 tsps ground turmeric
- 1 can garbanzo/chickpeas – drained
- 1 tsp ground cumin
- 1 large red onion, sliced
- 2 tbsps olive oil
Directions:
- Season chicken in a bowl with salt and pepper.
- Heat oven to 425 degrees
- Cover chicken with lemon juice, turmeric, salt and pepper.
- Prepare the sheet pan with aluminum foil.
- Put chickpeas on outer edge of pan, then onions, with chicken in the middle.
- Season with salt, pepper, and cumin.
- Bake until golden brown about 45-50 minutes.
