Sheet Pan Lemon Chicken

Chickpeas, cumin and chicken, oh my! This recipe is easy to prep and a delicious weeknight dinner when you don’t have the energy for something more complicated.

Ingredients:

  • 3 pounds bone in chicken
  • Kosher Salt
  • Black Pepper
  • 4 tbsps lemon juice
  • 2 tsps ground turmeric
  • 1 can garbanzo/chickpeas – drained
  • 1 tsp ground cumin
  • 1 large red onion, sliced
  • 2 tbsps olive oil

Directions:

  1. Season chicken in a bowl with salt and pepper.
  2. Heat oven to 425 degrees
  3. Cover chicken with lemon juice, turmeric, salt and pepper.
  4. Prepare the sheet pan with aluminum foil.
  5. Put chickpeas on outer edge of pan, then onions, with chicken in the middle.
  6. Season with salt, pepper, and cumin.
  7. Bake until golden brown about 45-50 minutes.
