Lyonnaise Potatoes

Ingredients:

  • 1 1/2lbs Potatoes peeled & sliced thin
  • 1 yellow onion sliced
  • 3/4 stick butter
  • 1 tbsp diced chives
  • kosher salt
  • black pepper

Directions:

  1. Add potatoes to pot of water and bring to boil. Cook about 8-10 minutes until slightly tender. Drain water and let cool.
  2. In a pan melt 2 tbsps butter and cook down the onions for 4-6 minutes until they brown. Put to the side in a bowl.
  3. Add in 2 tbsps butter and spread potatoes out evenly to brown each side and remove from pan.
  4. Once all complete, add the potatoes, onions, remaining butter and chives into the pan.
  5. Season with salt and pepper when tender and remove from heat.
