Ingredients:
- 1 1/2lbs Potatoes peeled & sliced thin
- 1 yellow onion sliced
- 3/4 stick butter
- 1 tbsp diced chives
- kosher salt
- black pepper
Directions:
- Add potatoes to pot of water and bring to boil. Cook about 8-10 minutes until slightly tender. Drain water and let cool.
- In a pan melt 2 tbsps butter and cook down the onions for 4-6 minutes until they brown. Put to the side in a bowl.
- Add in 2 tbsps butter and spread potatoes out evenly to brown each side and remove from pan.
- Once all complete, add the potatoes, onions, remaining butter and chives into the pan.
- Season with salt and pepper when tender and remove from heat.
